This barley porridge recipe is made without milk. It’s so filling that it can stand on its own as a main dish.

Ingredients
- Barley groats – 1 cup
- Water – 2 cups
- Chicken fillet – 500 g
- Mushrooms – 300 g
- Onion (large) – 60 g
- Carrots (large) – 100 g
- Garlic – 2 cloves
- Parsley for garnish
- Vegetable oil
- Salt
- Khmeli suneli (a Georgian spice blend)
- Olive oil – 2 tablespoons
How to Cook Barley Porridge with Water in a Pot
Step 1. Cook Barley Groats
I personally soaked the barley groats in cold water for two hours. Then, I placed them in a thick-bottomed pot and added water in a 1:2 ratio (1 cup of groats to 2 cups of water). I brought it to a boil over medium heat. Afterward, I reduced the heat and simmered it for about 30 minutes until it thickened. It’s important to stir the porridge often to prevent it from sticking.
Step 2. Prepare the Mushrooms
I washed the mushrooms. You can slice them, but I preferred to fry them whole for a more appealing presentation.
Step 3. Chicken Breast
This is straightforward. You’ll need chicken breast, which you can cut into cubes. I added spices during frying.
Step 4. Chop the Vegetables
Peel and rinse the onion, garlic, and carrot. I diced the onion and grated the carrot.
Step 5. Cooking Chicken and Mushrooms
Pour a couple of tablespoons of olive oil into a frying pan. Add the chicken. Then, add spices like salt and khmeli suneli. Sauté for 5 minutes. Add the vegetables. Cover the pan and simmer the vegetables with the chicken. After about 7 minutes, add the mushrooms. Continue simmering covered for another 15 minutes, stirring occasionally.
Step 6. Combine the Porridge and Chicken with Mushrooms
After the barley porridge and chicken with mushrooms are ready, add the mushrooms and meat to the prepared side dish. It turns out very delicious and filling. You can garnish it with parsley leaves for added aesthetics and positivity.

Food and Drink Pairing
As mentioned earlier, barley porridge with chicken and mushrooms is a standalone dish, but you can serve it with a vegetable salad rich in fiber, fresh juices, or a cup of hot tea. Just think about what you have in your kitchen and combine accordingly.
