How to Make Sauerkraut with Pork Stewed in the Slow Cooker

Step 1. Prepare the Ingredients. Choose pork, preferably pork neck, for juicier results. Thaw if using frozen pork.

Step 2. Cut the Pork. Slice the pork into small 1cm cubes.

Step 3. Prepare the Vegetables. Peel and dry the onion and carrots. Dice the onion into rings or cubes. Grate the carrots.

Step 4. Start Cooking in the Slow Cooker. Set the slow cooker to “Bake” or “Fry.” Heat a bit of vegetable oil in the cooker and sauté the onions and carrots until the onions turn slightly translucent.

Step 5. Add and Cook the Pork. Incorporate the pork into the sauté and cook together for 15-20 minutes.

Step 6. Prepare the Sauerkraut and Tomatoes. Rinse the sauerkraut in cold water. Dice the tomatoes or slice them thinly. Optionally, remove the tomato skins by soaking them briefly in boiling water.

Step 6. Enhance the Meat Mixture. Introduce garlic and squeeze out excess water from the sauerkraut. Combine sauerkraut and tomatoes with the meat in the slow cooker.

Step 7. Season and Stew. Add spices, salt and a pinch of sugar if needed. Pour around 50 ml of boiling water. Mix thoroughly and set the slow cooker to “Stew” for an hour. Stir occasionally.

Step 8. Serve and Enjoy. Offer ground black pepper when serving to each person’s taste.
