Ingredients

  • Beef liver — 500 g.
  •  Onion — 60 g.
  • Garlic — 2 cloves
  • Carrots — 80 g.
  • Olive oil — 2 tbsp.
  • Potatoes — 3 pcs.
  • Extra wheat flour — 3 tbs.
  •  Water — 200 ml.
  • Salt to taste
  • Muscat pumpkin — 200 g.
  • Ground black pepper to taste
  • Turmeric to taste
  • Sour cream 15% fat —100 g.
  • Dill — 30 g.

How to Make Beef Liver Stew with Pumpkin

Step 1. To prepare beef liver stew with pumpkin stew, defrost beef liver in advance, sift wheat flour through a sieve, peel garlic and onions, remove the skin from carrots and potatoes. You will need a large frying pan with high sides for frying and stewing products.

Step 2. First rinse the liver thoroughly under water, then cut it into medium-sized pieces.

Step 3. Cut the onion into half-rings or quarters on a cutting board.

Step 4. Potatoes should be cut into cubes or straws.

Step 5. Using a coarse grater, gently shred all the carrots.

Steo 6. The cloves can be grated or pressed through a special press. Garlic is never unnecessary in goulash, so you can add more.

Step 7. Add salt and black pepper and turmeric to the beef liver. Then pour in the flour and mix thoroughly. The flour should coat the beef liver and stick to it.

Step 8. Heat a pan with oil and fry for about 5 minutes. Stirring constantly.

Step 9. Then add the onions, carrots and garlic to the liver and stir-fry for about three minutes.  Stir constantly.

Step 10. After that, pour in the pumpkin and potatoes, mix it up . Now pour the sour cream, and cook for another 25 – 30 minutes min. Until the potatoes are soft. You can sprinkle beef goulash on top with dill, parsley or onion greens.
