Tomato, string bean and parsley salad

A simple salad with tomatoes, string beans and parsley perfectly complements any meat or fish meal. Boiled string beans perfectly meet with juicy fresh tomatoes and fragrant herbs.

String bean and tomato salad recipe is a nice vegetarian salad. That will take much time to cook.

Ingredients

  • String beans (fresh) — 175 g
  • Tomatoes — 175 g
  • Fresh parsley — 30 g

For the salad dressing

  • Vegetable oil — 25 ml
  • Balsamic vinegar — 15 ml
  • Garlic — 5 g
  • Salt — to taste
  • Ground black pepper — to taste

How to cook the salad with tomatoes, string beans and parsley

1.   Prepare all the ingredients. Use ripe and juicy tomatoes. You can substitute parsley with any greens you like.

2.   Cut off the tails of the string beans on both sides. Cut the beans into small pieces of 2-3 cm.

3.   Boil water in a saucepan. Add a little salt. Put the chopped beans in boiling water. Bring to a boil. Cook for 5-6 minutes over moderate heat.

4.   Flip the beans into a colander to drain all the liquid.

5.   Put the prepared beans into a salad bowl.

6.   Cut the tomatoes into 4 – 6 pieces. Put the tomatoes in a salad bowl with the beans.

7.   Finely chop the parsley. Add to the rest of the ingredients.

8.   Peel the garlic and pass it through a garlic crusher. Mix odorless vegetable oil, balsamic vinegar, and crushed garlic for the dressing.

9.   Pour the dressing into the salad. Season with salt and ground black pepper. Mix it up.

10. The string beans salad is ready.
