Marry Me Chicken on the Skillet Recipe

Alright, folks, let’s talk about a dish that’s so irresistible, it might just lead to a marriage proposal. You’ve probably heard of Ina Garten’s famous “Engagement Roast Chicken” recipe, but hold on to your hats because we’re about to take it up a notch. When the fine folks over at Delish got their hands on this culinary gem, it sent shockwaves through the room, with declarations like “I’d marry you for that chicken” and “OH MY GOD, THAT’S MARRIAGE MATERIAL” flying left and right. And that’s how this dish got its name – a chicken dinner so spectacular, it just might make you a fiancé by the time you’re scraping the last bits off the plate. I shook mention. In case you have no oven, you may cook it on the skillet  without roasting like here.

How to Make Marry Me Chicken on the Skillet

Step 1. Start by seasoning the chicken breasts generously with salt and freshly ground black pepper on both sides.

Step 2. In a large skillet, heat the extra-virgin olive oil over medium-high heat. Once the oil is hot, add the seasoned chicken breasts to the skillet. Cook for about 6-7 minutes on each side, or until they are golden brown and cooked through. The internal temperature should reach 165°F (74°C). Remove the chicken from the skillet and set it aside.

Step 3. In the same skillet, add minced garlic, fresh thyme leaves, and crushed red pepper flakes. Sauté for about a minute until the garlic is fragrant and slightly golden.

Step 4. Pour in the low-sodium chicken broth and bring it to a simmer. Scrape up any brown bits from the bottom of the skillet for extra flavor.

Step 5. Add the heavy cream, chopped sun-dried tomatoes, and freshly grated Parmesan cheese. Stir everything together until the sauce is smooth and the cheese has melted. Allow the sauce to simmer for a couple of minutes to thicken.

Step 6. Return the cooked chicken breasts to the skillet, coating them in the creamy sun-dried tomato sauce. Let them simmer in the sauce for an additional 5 minutes to absorb the flavors.

Step 7. Taste the sauce and adjust the seasoning with salt and pepper if needed.

Step 9. To serve, garnish the dish with freshly torn basil leaves for a burst of freshness and color.
