Ingredients

  • Pork brisket-1kg.
  • For marinade for 1 liter of water
  • Salt — 1tbs.
  • Sugar — 2 tbs.
  • Vinegar 70% — 1 tbs.
  • Bay leaf — 2 – 3pcs.
  • Allspice — 3-4 sprigs.
  • Cloves — 2-3 pcs.

For rubbing (spices in equal proportions)

  • Salt
  • Paprika
  • Black pepper
  • Pink pepper
  • Ground allspice
  • Sage powder

How to Cook Pork Breast with Spices — Recipe Steps

Step 1. Wash the breast, cut into pieces to fit in the pot.

Step 2. Fill the meat with water, add salt, sugar, vinegar, bay leaf, allspice and cloves.

Step 3. Bring to a boil, reduce the heat and cook at a low boil under a closed lid for 40-45 minutes.  After cooking, cool in brine.

Step 4. Pat the brisket dry with paper towels.

Step 5. Prepare rubbing mixture: In a bowl, mix salt and spices to taste.

Step 6. Rub the brisket on all sides with the prepared mixture. Wrap it in cling film. This way the meat will be better soaked in spices and will not leave the odor in the refrigerator.  Leave the brisket for 12 hours in the fridge.

Step 7. Cut the brisket into portioned pieces and serve.
