
Plov Tahchin, an exquisitely well-known dish among Iranians, is a mouth-watering treat prepared solely with the high-quality Basmati rice. Wikipedia purports that this dish is an offshoot of the much-loved plov; however, in actuality, it is quite similar to a casserole with a delectable chicken filling. It might seem like a simple dish, but don’t let its unassuming nature fool you! Usually, this delicacy is crafted with chicken, or Morgh in the local language, but vegetables can also be seamlessly incorporated into the filling to elevate the dish’s flavor profile.

Ingredients
When it comes to the preparation of this dish, the ingredients are the following:
- 150 g basmati rice
- 500 g of thick natural yogurt,
- 300 g of chicken fillet,
- 1 tbsp of plov seasoning,
- 1 tbsp of olive oil
- salt and black pepper to taste.
For the chicken broth:
- 1 clove of garlic
- 1 onion
- 1/2 tsp of cinnamon
- peppercorns and salt to taste

How to make plov tahchin
Step 1. To make the chicken broth, take a clove of garlic, onion, cinnamon, and some peppercorns and salt to taste. In a water bring these ingredients to a boil, along with the chicken, in a small pot and let it simmer for about 15 minutes until fully cooked.

Step 2. Begin the preparation by soaking the Basmati rice in water, measuring 4 cm or two phalanges in height, in the pot where it will be cooked for 1-2 hours. Subsequently, bring the rice to a boil with the water it was soaked in, adding salt to taste, and cook for approximately 5 minutes. Rinse the cooked rice with cold water.

Step 3. Proceed to take a thick-walled pot or a cauldron, and if you’re uncertain about your pot’s thickness, place parchment paper in it. Spread olive oil in the pot using a brush. Combine yogurt, plov seasoning, and rice, add salt, and black pepper to taste. Spread half of the rice mixture evenly in the pot.
Step 4. Shred the cooled chicken fillet into fibers or cut it into small pieces, and distribute it evenly over the rice in the pot. Spread the remaining rice mixture over the chicken and smooth it out with a spoon. Cover the pot, and cook on the lowest heat for 30-40 minutes. It is crucial to ensure that the yogurt has been fully absorbed into the dish. If the yogurt is still liquid, the cooking time will have to be extended.
Step 5. Once fully cooked, remove the dish from heat, allow it to cool for a few minutes, and then turn it over onto a plate. Cut the plov tahchin into small pieces and savor the scrumptious delicacy to your heart’s content!
