There are many recipes of bean soups. You can make a navy bean soup or soup with mushrooms and beans. Just choose the variant you prefer and cook with love and in good mood 🙂.
- Olive oil — 3-4 tbs.
- Bay leaf — 1 pс.
- Chili pepper— 1 pс
- Garlic — 4 cloves.
- Mushrooms (fresh forest mushrooms, I have white ones) — 400 g.
- Beans (here I have a mix of wjite and colo — 400 g
- Parsley — to taste
- Water (chicken broth) (approximately) — 2 liters
- Carrot — 50 g.
- Onion — 1 small pc.
- Tomato paste — 2 tbs.
- Salat and ground black pepper — to taste
How to make white bean mushroom soup
Step 1. Soak the beans in advance (you can overnight), boil in two liters of water (chicken broth), add bay leaf to the water and add salt at the end.
Step 2. Remove half of the beans, finely chop them in a blender and put back in a pot with broth.
Step 3. Heat olive oil in a frying pan and fry (crushed with the flat side of a knife) two cloves of garlic,and chili pepper. After you have fried them and they have acquired a golden color, take them out of the pan and throw them out, garlic and pepper have already given their taste to the oil and we will not need them anymore.
Step 4. Peeled, washed and chopped mushrooms fry in oil with onions and carrots until light brown crust. Add tomato paste, which can be previously diluted with water. Add salt. Simmer for another five minutes.
Step 5. Add mushrooms to the broth with beans and bean puree.
Step 6. Boil everything together for another 10 minutes. In the end add fresh chopped parsley, finely chopped garlic and freshly ground black pepper. Turn off the heat and let the soup brew for ten minutes.
The mushroom bean soup is ready. Enjoy your meal!
