Mimosa salad

Sardine layered salad or mimosa salad looks bright and festive. It is called a mimosa because of its resemblance to the beautiful flower with the same name. The similarity becomes apparent when looking at the salad’s top layer. It is crumbled and scattered boiled egg yolk. The recipe is especially popular in post-soviet countries. The ingredients are flexible and suit any taste. You can substitute sardine with tuna or tinned fish or add dill instead of green onion. 

Ingredients

  • Sardine tinned in olive oil 200 g. 
  • Chicken eggs — 5
  • Potato — 2 pcs
  • Carrot — 2 medium pcs 
  • Onion — 2 heads
  • Garlic — 2 cloves
  • Green onion — 30 g. 
  • Salt — 1 tbs.
  • Sugar — 1 tbs.
  • Vinegar — 1 tsp. 
  • Mayonnaise — 200 g, 
  • Parsley leves for garnishing
  • Black ground pepper — to taste

How to make mimosa salad 

Step 1. Prepare all the ingredients. Boil potato and carrot for approximately 25 minutes till the vegetables soften. Cook eggs for 10 minutes in boiling water.  

Step 2. Chop the onion. Please place it in a bowl and pour it into boiling water. Then add salt, sugar and vinegar. Marinate onion for 15 minutes.

 Step 3. Prepare mimosa salad dressing. Take ,mayonnaise, finely chopped garlic with green onion leaves annd black ground pepper.

Step 4.   Choose a big flat dish and start with mimosa salad layers. They are the following: Layers: potato, mayonnaise, sardine, marinated chopped onion, white, carrot, mayonnaise, yolks, chopped green onion.
