By braising cabbage with ground meat in one dish, you’ll get a wholesome main course that can be enjoyed on its own for the keto diet. You can also eat it as a side dish with bread if you consume carbohydrates. Alternatively, you can serve it with a side of your choice, such as spaghetti, mashed potatoes, baked or fried potatoes, or buckwheat porridge.

Tip! The recipe calls for a mixture of pork and beef, but you can use pork or chicken instead.

Ingredients

  • 600 g. ground pork
  • 300 g. white cabbage
  • 1 onion
  • 1 carrot
  • 2 tbsp. olive oil
  • 0.5 tsp. salt, or to taste
  • 0.5 cup water
  • Ground black pepper, to taste

How to Make Cabbage with Ground Meat

Step 1. Prepare the vegetables. Dice the onion and grate the carrot. Heat vegetable oil in a thick skillet or pan, then add the onion, carrot, and ground meat.

Step 2. Cook over medium heat, uncovered, stirring regularly for about 15-20 minutes, until the vegetables become tender and the meat starts to release its savory aroma. By the way, it’s not necessary to break up the ground meat into small pieces in this recipe. Let there be larger chunks for more flavor!

Step 3. Thinly slice the cabbage with a knife, add salt (a couple of pinches, then adjust to taste at the end of cooking), and lightly knead it with your hands (no need to overdo it, just a gentle kneading). Transfer the cabbage to the ground meat. Add some water if necessary.

Step 4. Reduce the heat, cover with a lid, and simmer, stirring occasionally, for about 20 minutes, until the cabbage becomes tender.

Step 5. Season with pepper to taste. Adjust the salt if needed. If your tomato paste is too acidic, you can balance it by adding a small pinch of sugar.

Step 6. Continue simmering for another 10 minutes, until fully cooked. The exact cooking time depends on the type of cabbage you have (some require more time, others less). The cabbage should be soft but still hold its shape, not turn into mush.
