This cottage cheese pudding dessert recipe excludes flour and contains a minimum of sugar, which, by the way, you can not put at all if you add sweet fruits. So following a diet, feel free to include this recipe in your menu.

  • Cottage cheese – 250 g .
  • Eggs – 1 pc.;
  • Cream 10% (sour cream) — 50 g.
  • Semolina – 3 tbs.
  • Sugar – 50 g.
  • Coconut chips – 20 g.
  • Vanillin – 20 g.

How to mak cottage cheese pudding with coconut flakes

Step 1. Separate the yolks and whites. Then gently break the egg in the middle with a knife. Open it into halves but ensure that the yolk remains in one of them. Then carefully pour the yolk from one half to other until all the white flows out. Do all the cooking actions above the bowl to avoid small troubles.

 Step 2. Put the white in the fridge, and the yolk can be immediately poured into the blender bowl.

Step 3. Add cottage cheese to the yolks in the blender. The fat % of cottage cheese is chosen according to your taste.

Step 4. Add a little cream or sour cream for a more homogeneous and delicate consistency. Also, add sugar and vanilla to the blender bowl.

Step 5. Beat all the ingredients until smooth consistency. Of course, you can grind cottage cheese through a sieve and mix everything in a bowl. It will not be any worse, just a little longer.

Step 6. Then pour the cottage cheese mass into a bowl. Add semolina and additional ingredients. In this case, it is coconut chips from the store. You can also add any dried fruits, nuts, citrus zest, seasonal berries and fruits. Or you can do it without additional ingredients at all.

Step 7. When preparing such a pudding for children, if you add banana puree, then you can not put sugar at all.

Step 8. Mix everything and let it stand so that the semolina swells a little.

Step 9. Meanwhile, we take out chilled white into a firm foam, which, when the bowl is tilted, will not pour out but will remain in place.

Step 10. Then put cottage cheese into silicon or ceramic molds. You can grease with butter ceramic bowl but I prefer not to do it. I just serve the cottage cheese casserole in it.  Turn on the slow cooker mode for a steaming mode for 30 minutes. Or cook in a saucepan in a steamer bowl.
