It is perfect as a filling for cupcakes and cakes, tarts, rolls or topping for various desserts, toasts, buns and homemade waffles. Since the curd has a very bright lemon and butter taste, it is more likely to supplement the main cream with a neutral sweet taste (for example, buttercream).
- Lemon — 2 pcs.
- Butter — 20 g.
- Sugar — 100 g.
- Chicken eggs — 2 pcs.
- Starch — 2 tbs.
How to make homemade lemon curd
Step 1. Add lemon juice and break eggs. Mix it up.
Step 2. Then put the starch and stir well.
Step 3. Pour the mixture into a saucepan and put it on a low fire.
Step 4. Cook until the mixture thickens (about 3-5 minutes), stirring constantly.
Step 5. Add a piece of butter. Stir until the butter melts. Pour into jars.
Step 6. If the eggs are scrambled (although this should not happen since there is lemon acid in the recipe), then rub the cream through a sieve.
