You can bake a tasty meal for lunch or dinner from the usual ingredients. Potato mushroom casserole in the oven is a fragrant and very nutritious dish. The main base of the recipe is mashed potatoes and mushrooms cut into thin slices. The accent of the meal is cream mixed with freshly ground black pepper and salt. Slowly cooked in the oven, mashed potatoes acquire a soft creamy mushroom taste and are filled with a delicious aroma of fresh dill or parsley. The finishing step is grated hard cheese that forms a delicate golden crust on the surface. You can also cook this casseroles without mushrooms.


  • Potato — 4 medium pcs.
  • Fresh or frozen mushrooms — 4 pcs. 
  • Onion — 1 small pcs. (about 100 g);
  • Cream (fat 20%) — 200 g.
  • Cheddar cheese — 70 g.
  • Eggs — 3 pcs.
  • Salt, black pepper — to taste
  • Vegetable oil — for frying;
  • A small bunch of parsley or dill — 30 g.

How to make potato mushroom casserole

Step 1. Mushrooms can be fresh or frozen. Chop the onion and cut the mushrooms not too finely.

Step 2. Pour a couple of tablespoons of vegetable oil into the pan and heat it. Spread the mushrooms with onions and fry over medium heat until lightly browned for 4 minutes. Then add a little salt, ground pepper and sour cream. Stir and fry for another minute. Remove from the heat and leave to cool.

Step 3. Peel and boil the potatoes. It should be pierced with a fork, but it should not fall apart. Drain the water from it and cool it to room temperature. Then smash it with a fork or a blender. You do not need to have a smooth consistency.  


Step 4.  Grate the cheese on a coarse grater and chop the greens. Break three eggs and mix well. At the end, add the mushrooms with cream and mix. Place the mass into a baking dish. The silicone mold does not need to be greased with oil, but the ceramic one will have to, so it is easier to squeeze the casserole.

Step 5. Send it to a preheated 180°C (356°F) degree oven for 40-45 minutes. You can check whether the casserole is ready with a toothpick. Pierce closer to the center with a toothpick or fork and see if there is any liquid on it. At the top, the casserole should be covered with a delicate golden crust.

Step 6. A very simple and delicious potato and mushroom casserole is ready. Cool it down a little. Then you can take it out of the baking dish. Serve hot with sour cream and fresh vegetables.
