This vegetable salad will be a nice idea for those who prefer not to eat meat or need to follow healthy low fat diet for any reason. Here I propose an easy recipe of beet and green bean salad. All ingredients are boiled or steamed. You can serve this salad with rice or baked potato wedges

Ingredients

  • Potato — 300 g.
  • Beetroot 300 g.
  • Carrot — 300 g.
  • Green beens (fresh or frozen) — 300 g.
  • Sunflower oil —20 g.

How to make beet and green bean salad.

Stap 1. Wash potato, beetroot and carrot. Put them in a big saucepan and fill it with water. Cook vegetables till they become soft. Cool the ready ingredients down. Then peel them.

Stap 2. Steam green beans in a slow cooker or as I have done in a special bowl for 15 minutes.  Wait till they cool to the room temperature.

Step 3. Cut potato, beetroot and carrot in cubes. Mix them with trimmed and snapped green beans add sunflower or olive oil.
