- Bell pepper — 2 pcs.
- Cucumber — 1 pcs.
- Tomato — 2 pcs.
- Feta — 200 g.
- Pitted olives — 100 g.
- Shallot — 2 pcs.
- Greens (like mint leaves, dill. parsley etc) — 20 g.
- Olive oil — 3 tbs.
- Juice and zest of half a lemon
- Salt, freshly ground black pepper
How to cook olive and feta salad
Step 1. Cut the peeled peppers into thin strips or dices. Break the feta into convenient pieces for eating.
Step 2. For dressing peel and chop the shallots very finely. Fold the mint leaves into a stack, make a roll, then finely chop. Mix 3 tablespoons of olive oil, lemon juice, mint, zest and shallots. Season with salt and pepper.
Step 3. Combine pieces of tomato, peppers, feta, olives and cucumbers in a bowl. Pour over the dressing and mix gently. Leave olive and feta salad for 1 hour in the frige and serve to the table.
