Ingredients for Grilled Veggie Sandwich
- Eggplant – 220 г.
- Yellow bell pepper – 70 g.
- Walnuts – 200 g.
- Mayo – 1 tbs.
- Bread – 4 pcs.
- Tomatoes – 100 g. for serving
- Pickled cucumbers 60 g.
- Garlic – 3 cloves.

How to Make Grilled Veggie Sandwich with Eggplant, Pepper and Walnuts
Step 1. Wash all vegetables. Cut the eggplants on thin stripes, remove the seeds from the peeper. Grill them on vegetable mode for 5-7 minutes. remove the dark layer from the eggplant slices.
Step 2. Chop the garlic.
Step 3. Grind the grilled vegetables with garlic and nut kernels in a blender until creamy mess. Add salt, spices you like and some mayonnaise for additional creaminess.
Step 4. Grill bread for 4 minutes on burger grill mode.
Step 5. Spread the veggie creamy mess on warm crispy grilled bread. Add halfs of small cucumbers on the top.
