
To vary the Christmas menu, you can make lactose free eggnog instead of a classic recipe. The list will be similar; just add less sugar, and substitute cow milk with boxed coco milk.
Ingredients
- Egg yolk — 4 pieces
- Dark rum (whiskey or cognac) — 4 tbs.
- Boxed Coconut milk — 500 ml.
- Sugar — 3 tbs.
- Vanilla essence (vanillin) — 1 tbs.
- Ground nutmeg — ½ tsp.
- Ground cinnamon — ¼ tsp
- Coconut сream — 50 ml.

How to make lactose free eggnog
Step1. Separate yolks from whites.

Step 2. Edd sugar and vanilla essence (vanillin).

Step 3. Wisk the egg mass with suger.

Step 5. Pour coconut milk into the egg mass, continuing actively stir with a whisk.. Add nutmeg and spices.

Step 6. Pour the egg-coconut mixture into the saucepan and put it on low heat. Stirring with a spoon, bring the liquid to a creamy state. It will take about 15 minutes. Make sure that the yolks do not boil. Then add cream. Simmer for another 5 minutes. At the end of cooking process add alcohol.

Step 7. Pour the coconut milk eggnog into glasses and let it cool down to room temperature or drink hot.
