Among the variety of chicken recipes those that involve cooking in authentic traditional stoves stand aside. One of these dishes is chicken cooked in a tandoori. This is an Asian stove, a thick-walled clay pot, the walls of which are evenly heated for baking food placed in it.

There are many chicken recipes. Various spices are used and there are many secrets of marinades. Cooks know that it is most convenient to cook poultry with vegetables. Vegetables are soaked with fat flowing off the carcasses during frying. Marinate tandoori chickens for at least three hours. The frying process itself takes 35-45 minutes. This recipe includes two small chicken carcasses no more than 1200-1300 g and 1.5 kg vegetables. The meal is for a company of 7-8 servings.

Tandoori roast chicken is a food that requires following the cooking instructions. The taste depends on compliance with the proportions of the marinade, properly heated tandoor, as well as compliance with the cooking time of poultry: no more than 45 minutes.

  • Two gutted chickens — each approximately 1300 g.    
  • Olive oil — 150 g. 
  • Turmeric — 1.5 tsp.

How to cook tandoori roast chicken

Step 1. Chickens must be cut in half from the breast side like for cooking tobacco chickens. Immediately prepare the marinade: mix ground hot pepper, ginger, salt, turmeric and olive oil. Part of the oil must be left for vegetables. Some cooks add fresh garlic and ginger, chopped quite large. However, there is a possibility of their burning in a tandoor. It is better to take ground ingredients.

Step 2. The marinating process begins when you put one chicken in a deep container, smear it generously with marinade, then place the second carcass and soak it with the remaining spicy mixture. Cover the container with a lid and leave it in a cool place to marinate for at least three hours. 

Step 3. Peel the potatoes into wadges, wash and cut into pieces, Do the same with  onion and carrot.Cit onion in rings and carrot in cubes. Mix the vegetables with salt, add Herbes de Provence and the remaining olive oil, cover with a clean towel or lid, and let stand for 30 minutes.

Step 4. To cook a whole chicken in a tandoori according to the recipe, a special construction in the form of tiers with grates is necessary. After the time has passed, the chickens are placed on a tiered grate. The first bird is placed on the top grate, the second one are located lower. A frying pan with previously pickled vegetables is installed on the lowest shelf. When frying according to these instructions, the fat from the chicken will grease and soak the vegetables. Placing the ingredients on the tiers, put the grate into the preheated oven.  

Step 5. Close the lid for approximately 45 minutes, take out the finished fried poultry and soaked toasted vegetables. Lovers of a golden crust are recommended to open the lid ten minutes before readiness, at the same time opening the tandoor fan slightly, the meat will fry well on top. Chickens are roasted unusually soft. This meal is served with fresh vegetable salad, dry white wine or fruit juice.
