Ingredients

  • Milk — 600 ml.
  • Eggs — 5 pcs.
  • Sugar — 80 g.
  •  Vanilla sugar — 1 tsp.
  • Salt — 0.5 tsp.
  •  For caramel:
  •  Sugar — 120 g.
  • Water — 40 ml.

How to make Creme Caramel or Flan

Step 1. In a saucepan with a thick bottom, combine sugar (120 g) and water (40 ml). Place the saucepan over medium heat and wait for all the sugar to melt without stirring.

Step 2. Increase the heat slightly and let the caramel turn amber. Remove from the heat immediately and pour the hot caramel into molds, making sure to cover the bottom completely.

Step 3. In the same saucepan, pour in the milk (no need to wash the saucepan), add sugar, salt, and vanilla sugar. Heat the milk over medium heat until the sugar has dissolved. Do not boil.

Step 4. In a bowl, whisk the eggs and add the milk to the eggs, stirring constantly to prevent curdling. Strain the mixture through a fine sieve.

Step 5. Pour the cream into the molds placed on a baking sheet covered with a napkin. Cover the molds with foil and pour water into the baking sheet, reaching halfway up the molds.

Step 6. Bake the Creme Caramel at 160 degrees for 30-45 minutes, depending on the mold size and oven characteristics.

 Step 6. Remove from the water and cool to room temperature. Refrigerate for 3-4 hours to achieve the final texture and flavor.

Step 7. To remove the Creme Caramel from the mold, run a thin knife along the walls of the mold. Cover the mold with a plate and flip it over.

Step 8. Decorate with berries and fresh mint if desired.
